HOW TO PREPARE CREAMY CARBONARA



Ingredients (Classic Creamy Carbonara – No Cream)

  • Spaghetti (or fettuccine)

  • Eggs (2 whole eggs + 1–2 yolks)

  • Parmesan or Pecorino Romano cheese (grated)

  • Pancetta, bacon, or guanciale (diced)

  • Garlic (optional)

  • Black pepper (freshly ground)

  • Salt

  • Olive oil (small amount)


Steps

1. Boil the pasta

  • Bring salted water to a boil

  • Cook pasta until al dente

  • Reserve about 1 cup of pasta water before draining


2. Prepare the sauce base

  • In a bowl, whisk:

  • EggsGrated

  • cheese

  • Black pepper

  • Mix until smooth and thick


3. Cook the meat

  • In a pan, cook pancetta/bacon until crispy

  • Add a little olive oil if needed

  • Optional: add garlic for extra flavor


4. Combine pasta and meat

  • Add drained pasta directly into the pan with the meat

  • Toss to coat in the fat


5. Create the creamy sauce (important step)

  • Remove the pan from heat (to avoid scrambling eggs)

  • Pour in the egg-cheese mixture

  • Toss quickly while adding a bit of reserved pasta water

 The heat from the pasta gently cooks the eggs, creating a silky, creamy sauce.


6. Final touch

  • Adjust with more pasta water if too thick

  • Add more cheese and black pepper

  • Serve immediately


 Optional Creamy Version (With Cream)

If you want it extra rich (not traditional but popular):

  • Add ½ cup heavy cream to the pan after cooking the meat

  • Simmer briefly, then add pasta

Common mistakes to avoid

  • Cooking eggs on direct heat → turns into scrambled eggs

  • Not saving pasta water → sauce won’t be silky

  • Too little cheese → lacks depth
